The only thing that is going to get you a NitrIte reading is the ammonia be converted by the bacteria to nitrite.Thats too bad, and kind of ironic that a fish drowned.

should i do 1 more w/c to try and get some nitrite readings
So, once the bacteria starts to colonize in your filter, you will start to get nitrite readings.
Are you still using ammolock?
If you are, I would say stop using it, as it seems like you can keep your ammonia level down close to .25 ppm.
