Hm, sounds like the water problems I used to have in an old house. I ended up doing water changes with a RO and Rain water mix. I know that's not possible for everyone (not everybody has access to collected rain water!), but it definitley kept the nitrates down - the only thing I had to...

What treatement are you using on your tap water at the moment, while doing water changes? I have used Seachem's "Prime" for some time now, and it works wonderfully. It removes chlorine, chloramine and ammonia, as well as eliminating the risk of ammonia. It also detoxifies nitrites and nitrates.

I think we have about 400 Guppies in total, in various tanks. Personally, I really dislike them - but they're forever being dumped on us. The Ghost Knife will stay with me, no matter how big he gets. We have just bought a 6ft tank - so when he outgrows all of the other tanks he'll go in there...

200 fish is a lot of fish, especially in a 300ltr tank - and given some of the varities we have in there (there isn't an albino shark though..that I know of!! and we don't have a common Plec - only 2 Ancistrus, 1 Golden Ancistrus and 2 Bristlenose) I am amazed that in it's nearly 2 year life...

I'd go with Glass Catfish. We have over 100 of them in our tanks, all said and told. They're wonderful fish and I've always found them to be very hardy. They look superb when they shoal in a planted tank.
