What are you cooking?

Glad I checked how many quart vacuum freezer bags I have as I only have 4 left and need more. Just order 72 of the things that will be here Monday so all is good.

I do a LOT of slicing and dicing then freeze. Currently I have 6 bell peppers, 2.5 pounds of shrooms and 2 large red onions to do. LOL! I don't think 4 bags would do it. ;)

I slice and then flash freeze spread out on a sheet pan in my chest freezer. Then bag and freeze. Flash freezing spread out prevents sticking together.

a good while back we quit using the individual vacuum bags. we buy the rolls 8inches and 11inches wide and make those as large as we want. have to put up some broccoli I picked up earlier this afternoon. will be putting up more collard greens and also the broccoli leaves.

I like the bags with the zip close and vacuum valve as they can be reused. The pump is sort of like a reverse bicycle pump. The pump can be electric but mine is manual.

Huh, I think I need to up my freezing game, lol. I used to want a vac bag sealing tool. But now I need to research vacuum bag seals. Or maybe I'll just keep squeezing out the air as best I can & call it good enough.

You guys help me think of new ways to do things, thank you!

I couldn't do the freezer stuff with just my apartment's fridge. I bought a 7.1 cubic foot chest freezer for doing. I don't just do the veggie stuff. When I make pasta sauce, chili and stews I use a 2 gallon slow cooker and also bag and freeze. I'm a believer of cooking once and eating often. ;)

I reseal my vac bags all the time. I make them a little longer and when I want part of the contents I just cut the bag right against the seal and pull out what I want and put it back in the food saver and hit vac/seal and throw it back in the freezer.
I bought one of those mason jar lid seal units to use with the food saver. I mostly use it for my catfish bait. I put I cut up chicken breast and throw in some chicken livers and vac the lid and let it set in the fridge for a few days. it impregnates the breast with the liver and viola got good bait.
 
We had dinner at a tiny Thai restaurant in Thai Town in Hollywood called Luv2eat Bistro Thai. I had a terrific noodle dish with duck, roast pork and deep fried pork belly in those wonderful Thai spices and herbs. The meat had been marinated in lime juice, fish sauce, garlic and Thai curry leaves. It reminded me of my time in Thailand. Authentic place.
 
I love Thai food! We do local take out for special occasions. It's always hard to choose just 1 dish each but I usually get the leftovers for brunch ;) My husband loves me that much, lol.

We're having leftover shepherd's pie & spanikopita appetizers tonight. A semi healthy & yummy dinner.

We're gearing up for my husband's traditional Italian hoagies for our Thanksgiving Day of food & football. Not my choice, but you can't argue against traditions. I may have pumpkin +/or cranberries in some form.
 
I might be OD'ing on hoagies, lol. My husband went nuts & bought more than our usual TG amount. So, we had some for dinner last night & brunch & dinner tonight. Ugh, I'm not sure I want any for brunch, lunch or dinner tomorrow, but I might feel different in the morning. The things we do for love...& food...

I hope there was some turkey and cranberry sauce on those hoagies today 😄
 
NO! I have to go with my husband's Italian hoagie choices & those are 2 of the many things he hates about TG. I sometimes do a pumpkin pie or cranberry side just for me but not this year. Actually, he eats pumpkin bread or curry once in a while but never on TG. I used to go to my family's big TG/birthdays event & this is what he's learned all those years when I was gone. I miss pies of any kind!!! & my family...& cranberries...turkey is the least of it, but I do like it on rare occasions. Sweatpants (for company :) ), football & hoagies are my new normal. It's not all bad, lol.
 
OMG! No turkey on Thanksgiving! That’s a first for me. lol.
 
We had a wonderful Thanksgiving with my son and our west coast cousins. Fantastic meal capped off with apple and quince pie topped with ice cream. Tomorrow morning we fly back to Maryland. On Saturday it will be 20 degrees. Burr. But I will be inside tending to my five tanks that have been on their own for 8 days. I know my 50 fish must be starved. No turkey for them.
