What are you cooking?

We don't eat baby animals (no lamb or veal) at my house so it's beef. My Irish friends would disagree about lamb, they do beef too. You would not want the shepherds eating the stock unless maybe it was mutton. I don't think I've had mutton. To me lamb has a lanolin soapy taste, but I did have lamb hors devours once that were quite tasty. Our Ozzie friend insisted I try it. My husband would not.

Tonight, it's chicken chow mein. I'm tired from shopping for & chopping veggies. But I forgot to start the (brown) rice so dinner will be a bit later. Luckily, I had a bag of already cut up chicken in the freezer, a major step saver! I find chicken to be more gross to handle than beef or pork, but I do it.

I judge steak doneness like you do. The less wiggle feel w/spatula, the more done it is. I have to cook my husband's more than mine. I also like to have a ton of sauted mushrooms with mine. I do a big batch of "shrooms" & keep them in the freezer. Good on burgers, in strouganov, etc.

I love cooking tangents! It's my creative outlet too. I'm usually willing to try many things...within my husband's preferences. I'm not making more than 1 dinner & I have seafood or fish sometimes for lunch or out to dinner, not his foods. After 47 years I sometimes have to remember that those are his issues, not mine, lol.

The coffee/chocolate combo also works well as a mocha cake frosting! Make a red berry cake, such as strawberry or raspberry, and use a mocha frosting with thin sliced strawberry or whole raspberry around the outer top edge, depending on the berry in the cake, and you end up with a delicious cake that also looks impressive. Red berries and mocha were just made to go together. :)
 
Those cookies & cake sound good!

We had football hoagies (yeah Eagles!) & will have frozen eggrolls soon. A no cooking day! Always nice for a change, if less healthy.

Ya, it is. Cake has to be chocolate though. Think like strawberries or raspberries dipped in milk chocolate. ;)

Doing a backward old favorite and a kid's favorite. ;) Ever do beans and weenies? Try doing a chili dog and diced onions but top with baked beans instead of chili.
 
Our weenies & beans don't go in buns usually, but sometimes. Just a plate of swimming goodness, lol. I haven't made chili dogs in a long time. Where I come from "Coney Islands" don't have beans but, depending on the location, may have beef heart in the chili (kinda gross but tasty). With raw onions & mustard.

We're having enchilada casserole, a sort of Mexican inspired lasagna. Corn tortillas instead of noodles; cottage cheese instead of ricotta (old folks doing less fat, lol), Cheddar or monty jack, black beans (sometimes with ground beef) & a tomato-y salsa. I usually use Pace med or hot; it has onion & peppers so no need to chop things.

I didn't mean putting beans and weenies on a bun. I meant a whole hotdog on a bun topped with beans instead of chili. :)

I LOVE enchiladas, especially chicken.
 
That's what I thought, grown up? whole hot dogs, not sliced up like for little kids, lol. But I prefer my hot dogs grilled or fried; husband does boiled sometimes, no.

I think my thought is missed a bit. I'll do hotdogs grilled, saute or steamed, seldom boiled. I'm just talking about a hotdog on a bun with baked beans as a topping instead of chili...
 
Breakfast
fried cheesy grits with corn starch & Watkins all purpose seasoning, fried in avocado oil plus microwaved poach eggs with lemon pepper seasoning.
