I have to admit, I have been in the situation where I have had a mature angel and been umming and ahhing about adding a second - it might just be a situation of finding a few similar sized ones and trying a few and see if a pair forms? I dont know I can totally understand if you dont want to risk it with your current one.
I would 100% go with sand as there are not many fish that actually need gravel where as there are quite a few fish that need sand.
Cupids IMO one of the most underated cichlids I really wish I had space for some in my tank a lot of photos dont show off full potential as their real beauty is quite iridescent and reflective but in the right tank shows up incredibly check these out though - http/www.aquatic-experts.com/Biotodoma_wavrini.html
I think the Rotkiel would work nice in there
The Bronze Cories will work nice as well You could mix the Albino and Bronze if you like And those Bentosi Tetras are perfect very nice! Headstanders are just an interesting fish IMO like I say a nice addition to the South American tank a medium sized fish that pretty much stay to them selves in a group, they do nibble at plants but if your planning a Severum plants are not really much of an option lol.... But the headstanders can help a little with algae.
As for decor - twisty wood is perfect stack it up at each end of the tank and leave the middle for swimming space
