Sounds like a plan...you can use practically anything to fasten that JF onto...nice sized rock, driftwood, anything to get (and keep) that rhizome exposed...I've had some fastened to coconut caves in the past LOL about the username...

Are there fish in the tank? Snails are scavengers, they'll eat whatever they can find, including fish food...in a well-established tank, they do fine with what is already there, but occasional fish food or blanched veggies will be enjoyed, as well

Not necessarily a bacterial bloom...could be microbubbles from dissolved gasses in your tap water Are you matching the tap temp to the tank temp as closely as possible when performing WCs? Any recent changes to your filter(s)? Do you vacuum the substrate weekly?

I feed every 2 or 3 days, regardless of weekly WCs....fish don't need to eat every day, in the wild or in our tanks

Looks like 0 ammonia, from what I see; and nitrAtes aren't too high, either. Are you shaking the 2nd nitrAte test kit solution like mad before adding to the test tube? If not, you will get erroneous results.
