Your tank is in the middle of a cycle or is into a mini-cycle. Your nitrites are too high, they should be at 0ppm.

Do you mean from the poo itself or was in the aquarium and moved towards it? If the latter, it may be planaria. Not a big deal at all and harmless. Feeding a bit less and gravel vac/wc will get rid of them.

I'd go for silver dollars. I think they are better looking and they don't get as big. SD's get to about 6" and Tinfoils get twice as big. You could put quite a few in a 180g tank. It would look great!!! I can't wait to see pics no matter what you choose.
