A bit too creamy I think. Too much flour I mixed in LOL.
And it was ground elk I used, not chucked meat. But hey, it's still elk! 😅
My parents and brother say it tastes really good!
(My brother is hard to please with food so that's awesome 😂)

Oh and I forgot to mention, I only used one pound of elk meat and then used black beans to "stretch" the meat out a bit
 
Planning on how to go about this coming Thursday. I have my Panda Garras to pick up and, the same day, two new SSD computer drives are due to arrive.

Pandas are easy as it is just a matter of floating the bags for like 20 minutes and releasing. Ya, I know, not good to use the water from a store by just adding but I know how the source handles their water and it is safe.

As to the drives I am replacing two in my main system. One is my system drive (Windows installed) and the other is for doing clone backups of the system drive. I'm just running out of space on my 500GB drives mostly due to being a little bit of a gamer. Replacing both with 1TB drives. Shoot, I have one game that takes well over 100GB of drive space. Nothing difficult but just considering different ways to do.

I have a LOT of games from them. Probably 10-20% of the games were free just due to allowing their news letter. They are also a great source of old games that have been rewritten to run on modern systems. I love this outfit.

Doesn't look like there is any sour cream. To me it is not stroganoff without sour cream.

OK, the photo just didn't look like there was sour cream and, in my opinion, it should as stroganoff is a cream sauce.

I think it known that I am old school and that includes stroganoff which is one of my main comfort foods. I just don't agree with a lot of the modern recipes. While elegant stroganoff a very simple dish with few ingredients.

Today's recipes seem to try to complicate the simple. Here is how I do it...

Start with the meat... Ground meat just does not cut it as texture is lost. Stroganoff needs a good cut of meat. I use rib eye strek but would love to try something like elk or buffalo. When I have a need for a good steak it will always be rib eye from a local butcher. While getting the steak I will add a couple of 1/4 inch slices. The 1/4 inch slices are for stroganoff.

Here it is...

1) Slice the 1/4 inch rib eyes to strips and brown in a bit of butter and olive oil. Looking at 1/2 - 3/4 pounds of steak for two people.

2) Add 1/2 - 1 cup pf burgundy, depending on the desired richness, and reduce by 1/2.

3) Add 1/2 pound of sliced button shrooms. More shrooms can be added according to taste.

4) After the shrooms are cooked mild soft add sour cream and nutmeg. Look as the sour cream as 8 ounces per pound of meat. As to the nutmeg look at 1/4 - 1/2 teaspoon per pound of meat depending on taste.

5) Let it 'tighten' and serve over egg noodles.

The thing is the nutmeg. You won't find it in today's recipes but it is what gives stroganoff its 'mystique' and the flavor that only 'old school' stroganoff can have.

Oh, this is even better if the egg noodles are sauteed a bit in brown butter.

Don't just put a pile of noodles on a plate and cover. Stroganoff is a casserole. Add the noodles to the sauce and toss. I recommend that the noodles be a little under done so the mix can simmer a couple of minutes to blend everything.

Stroganoff is also awesome with chicken as the meat. Chicken and cream sauces just blend well.

If you look closely at the substrate you can see the difference in colour balance which is fairly obvious (though the 3rd picture does a poor job of showing it in detail).
 
Been doing some wood working lately yesterday and today.
Nothing fancy. Just some rustic flower beds and then a dig pit for Luna to dig in
 
My dad took some of the left over stroganoff to work and called to say he absolutely loved it!
I'm gonna be having some for lunch as well lol
