Im about a week in now, just want to make sure I'm on the right track.

I added some media from my edge to help and now I think I'm getting going.

My ammonia was going very dark green. 8ppm+

Now I'm on 4ppm ammonia, 0.5ppm nitrite ish. Not bright blue, slight tinge of lilac in there now.

7.6ph, steady 27/28 degrees.

Air pump in there doing its bubbly thing.

So now I'm waiting til my ammonia gets back to 0.25 and dose it back up right? And eventually they will both peak and drop within 12 hours, and after 5-7 days of that, big water change, dechlorinate, add plants and fish?

Yes that pretty much sums it up. You can let the ammonia fall to zero before redosing so don't worry about that. Top back up to no more than 2ppm.
