How many discus would I be able to keep in an 80-gallon (72"x13"x21")? I was thinking I could keep 6 juvies and then rehome 2 once they got larger and/or paired off for a total of 4 adults. Also, would I be able to keep other fish with them or would the tank be fully stocked?
 
well.. im not 100% sure cause your tank is by "13" but i dont think... humm.. in a standard 80 gallon you could keep 6 adults... just keep the water clean

Despite the width, I'd say 6 would be no problem, even as adults, potentially with a shoal of cardinal or rummy nose tetras.
Most reckon on allowing around 10 galls per discus with a minimum group of 6 as a permanent home. So nothing smaller than a 55 gallon (as permanent home).
 
I keep 8 discus in a 4 foot, 300 litre tank, as long as you check the water, and keep on top of changes you should be fine. I do have an external and internal filter, as they are messy.
