I have recently noticed that my betta looked kind of fat, but not bloated like some of the pictures I have seen. I realized that I have not seen him poop, or any poop on the bottom of the tank like I normally do with my main tank. I have had him for about a week, and give him 2 pellets the size of his eye, 2 times a day. Should I be worried?

Stop feeding for a couple days and see what happens. Fish can survive weeks on end (like humans) without food. Leave him for a couple of days. A picture would help.

I’ve never had a male betta, but perhaps check the amount of fiber recommended for a betta and the food you give him? I assume it’s betta fish food, though. If he is a small fish in a planted/decorated tank, then it is likely you won’t see his poop.

Here is the tank he is in, I will post a close up as soon as I can

Fish don't get constipated. It's a mammal issue caused by lack of fiber and water.

Just fast him for a couple of days and see how he goes. But if he is eating well, he should be pooping.

You can try other foods besides pellets. There are frozen daphnia, brineshrimp, bloodworms, prawn, etc. You buy them from any pet shop and keep them in the freezer. take a bit out each day and offer them after he has had some dry food or instead of the dry food.
eg: dry food in the morning, frozen (but defrosted) at night.
