Acclimating - SERIOUSLY high nitrates...

Hi,
Just rescued a betta that's in incredibly good shape, beautiful fins, couldn't' let him stay in that cup. He's floating in the bag in the tank now, just did 20% water change in his bag with the tank water and did a reading of the water he's in in the bag: barely any ammonia at all if any, they said he just came in yesterday or today, weren't sure which group. But the nitrates in his bag water are well over 100! Should I just make this acclimating thing as fast as possible?? How dangerous is this high a readings?? The ph/kh and hardness are almost identical to my water.
He's very annoyed at the bag and trying to get out, flaring, very active. He's going into a 5 gallon tank w/filter (floss & some gravel from our other tank). Thanks!
 
it's been about 2 hours, been changing small amounts of the water every 15 mins - he's not looking as good and is slowing down so that's enough, he's in the tank now. have a great night :)
