That's the pull temp, the internal temp will rise 5 F or more depending on the thickness and oven temp. I've pulled at 125 and ended up at 135 which is my preference - YMMV.

Fish, more than any other 'meat' benefits from a good thermometer to check flesh temp. I pull my salmon at 125 F If you can afford it, buy a Thermapen (Thermoworks), you won't regret it. This is the thermometer that you see on most cooking shows, with good reason.

Depends on the filter. My Aquaclear 110 HOB will run to about 50% tank full. I leave it running to help distribute conditioner. 50 gallons is too much to pre-condition. If it looses suction, I turn it off and fill from the top once the level is bit higher.
