Could you use pond foam instead? There are a couple of brands like Oase and Superfish that do it. Its a fish safe black expandable foam that you could squirt in and let it expand and then trim down. Wills

Laetacara is a family of species so where you have split them I bet you've looked at Curviceps and Dorsigera - they are all pretty similar in care and will do well in your softer water - you also have the Araguaiae which is a stunning fish. Being close to Pier you will have the pick of all 3 :)...

I think as long as you think in 2-3 years time you'll still be motivated to maintain it - once the initial excitement is over and you've got to a stage where you're no longer adding fish. It is a good decision, it should be something you enjoy and thats worth investing in.
