What are you cooking?

Isn't plantain super aromatic? Where do you even buy it? I love experimenting and trying new cuisines but honestly one I still didn't try is African. I used to meet one Nigerian lady at a food festival and all the meals smelled kind of off and I suspect some of it was the plantain. It is very fragrant, no?

Hey, Not aromatic at all. Its kind of tasteless with slight hint of sweet. Sweet with rubber texture if ripe and well fried. Its a favourite with africans and caribbeans.. I normally buy it in the UK from the indian vegetable shops

A lot of that depends on the ripeness of the plantain. Both green and ripe plantains are used. The green are on the bitter side and very starchy but will pick up some sweetness when cooked. When ripe they are easier to peel and have a sweeter flavor. Plantainsare often compared to a mix of potatoes and bananas
 
I must be confusing it with some other ingredient. Maybe banana leaves or something. I will keep an eye out on these if they are ever sold :)
 
fixed my super egg breakfast for me & the mrs.
used olive oil in non stick frying pan. take 2 thick outer slices of onion. sauté the onion rings till half cooked. then add the egg to the middle of the onion and let go till sunny side up. take thin pan cake turner and remove each egg/onion ring to small plate. sprinkle with lemon pepper and put a round slice of provolone cheese on top and put in microwave till the cheese is just melted over the works.
 
Didn't have much time today to cook anything big so pie, gravy and veg.

On my next grocery delivery order I have to add Roma tomatoes and thin peppered bacon. I think I'm getting a craving for a BT sandwich which is a BLT minus the lettuce. The lettuce just makes things all slippery. Just Roma tomatoes and bacon on whole grain bread with Mayo and a lot of pepper makes me a happy camper. :) I prefer Roma tomatoes for this as they are more meaty with less seeds and water.
 
LOL! Finally having my port chop and fried peaches tonight that I was supposed to have a few days ago but a cheeseburger got in the way. ;) To go with the pork and peaches there will be mac and cheese with broccoli mixed in. Of course there will be some apple sauce on the mac and cheese. ;)
 
I had some carrots about to go bad, so I made a carrot "cake" with almonds and lemon peels. Was amazing, but too many pieces to eat and not gain weight. Tried to send half of it away.
I cooked one of my leftover concoctions, button mushrooms, broccoli and beans (kidney, not green) stir-fry with soy sauce and ginger when boyfriend was away, cause he does not eat mushrooms or broccoli. I put a bit too much chilli and ginger, so it was fun.
Today we tested a lavash bread/wrap that was sold here, I recently started paying more attention to the ingredients and all the tortilla wraps are dreadful, but this was mostly clean, so yay. Tasted pretty much the same. Hurray for armenian bread that was sold as part of "orient" week in Lidl.
And tonight, because boyfriend is going for a tooth etxraction tomorrow, I will make us meatballs form some minced beef we had in the freezer, with tomato italian sauce and pasta. And I will precook purreed vegetable soup and mashed potatoes for him tomorrow. And pick up some icecream :) no chewing for him for a while. So we have to go polish off the carrot 'cake' with coffee now
 
We are having a guest for dinner. She is a pescatarian. I plan on making cod in a smoked paprika butter sauce, roasted potatoes (extra crisp) and green beans with slivered almonds.
