That is terrible even by my standards.

(but if you must know, you need a blow torch. And lots and lots of ratchet straps to get them to hold still)

9 Roasts for a Christmas dinner at church, for those with no family to share Christmas with this year… 5 beef roasts, 4 pork roasts… pealed 25 lbs of potatoes, 15 lbs of carrots for 2 large roasters… I’ll have the staples, others bring a dish to pass if they are able… numbers went from a dozen, to over 50, in the last week…
I browned all the roasts ( fire kissed meat… yum, yum ) 🥩 on the grill, before they went into the roaster… a beautiful sight, seeing the grill filled twice, with 2 inches thick of meat completely covering the grate…

That's a very nice tradition, Magnum, yours too, Badger. Sounds yummy.

My husband only "cooks" grilled cheese on rye...& sometimes we have popcorn & cheese after a big lunch, lol. But he does fetch take out pretty well...usually. He's already putting out meal requests (yes, plural!!) for his B'day dinner in a week & a half. He thinks that means he "gets to" choose food for a month. He plays the pathetic card since his B'day is so close to xmas, he often missed out on special things as a kid🎻
 
So what is your Christmas dinner and what do you do for Christmas Eve?

As to the Eve I'm doing what I said above with the sliced chicken, broccoli and gravy with egg noodles but, this time, pork. What can I say? It is one of my favorite comfort foods and I wanted again. ;)

For Christmas I'm not doing anything big. Will have a 10 once top sirloin steak with a baked tater and corn. Not fancy but I'll enjoy. There will also be sauteed onions for the steak and tater. Will probably do brown gravy for the tater and some cranberry sauce. Not really anything fancy but a nice dinner.
 
I guess we're having grilled cheese on rye tonight, eventually. Maybe peas too. I'm having hunger pangs now, so hopefully not too much longer...I'm trying not to nag...

Tomorrow will be baked ham & pineapple with roasted potatoes & carrots, maybe broccoli or a salad. My husband wants au gratin potatoes with lots of ham for most of the leftover ham. He also likes fried ham, potatoes, onion & pineapple, me too. Or fried ham'n'cheese sandwiches. I freeze the ham in thin slices & "bits". The ham may last almost until Easter cheap ham sales if we don't get carried away. Not the healthiest of foods but there are those "quality of life" issues too...

I remember when we first got married that frozen ham was very much "lesser". Might have been turkey ham or just not a good low enough freezer temp.? Kind of a gritty texture, eww. I've done it a few times the last couple years & it works great!

my mom used to do the cabbage stuffed all the time, she called it piggy in the blanket. some of the best meals I've ever had were leftovers. some things acquire all the seasoning taste over the fridge time.

I absolutely and TOTALLY completely LOVE stuffed cabbage but have never made on my own. A friend's wife back in the 1980's made the best I've ever had. I will admit that one of her spices just became usable in Maryland.... ;)

Doing something a bit off the wall this evening with my steak and baked tater. I was going to just do a gravy for the tater and sauteed onion for the steak but decided to try something. The gravy is out. Right now, while the tater is in the oven, I have a saute pan on the stove with red onion, whole kernel corn and quite a bit of butter just on warm until the tater starts getting soft and I start the steak.

I REALLY like the combo of corn and tater. When I make mashed taters I almost always add corn. They just fit together for me. ;) With a baked tater I really like saute onion and then bury in butter and sour cream. I also tend to add sour cream to mashed taters. Do we see a trend here? ;) Decided to experiment and combine the two. Tonight's tater will be smothered in onion, corn, butter and sour cream. Can't see any way it could be bad. ;)

My stuffed cabbage came out fantastic. I had 1 1/3 lbs of ground beef and a very large cabbage. Lots of spices, raisins, lemon juice rice, and bertollis sauce. It was enough to make 13 pieces. Will have leftovers for the next couple days. 😋

If the leftovers are too much you can feel free to send me some. ;)

Don't really know why I've never made the stuff myself. I mean it isn't all that hard to do even though time consuming... If done right it isn't a quick meal. Mayhaps it is just one of those things that I like so much I want someone else to do. :dunno:
 
We ended up with close to 60 people at church for Christmas dinner, they ranged from singles or couples that had no other family to spend the day with, to a young family with 7 kids, who are building a new house themselves, and staying in a trailer, until they can move into the house… the goal was to be in the house by Christmas, but it’s not quite done, and they have to eat in shifts, in the trailer…9 roasts I made, with 25 lbs of potatoes, 15 lbs of carrots, and 6 onions… and no leftovers, that someone didn’t take home…

Many brought seasonal sides, and we had a great meal…

The next chore, after cooking all that, I spent an hour on the dish washing crew, after the meal… my wife and I are so blessed, we didn’t do gifts between us, and I was glad to serve on Christmas… hope everyone had a great holiday, and got out of it, what you needed…
