I made a couple of hoods for my tanks out of pine and plywood (pine for the frame, plywood for the lid). Just wondering if this stuff is ok to use to varnish the inside.

It's a polyurethane, water based varnish I *think*... you can wash the brushes in water, so I assume it is.

How many coats should I give it.. 2, 3? One hood will be used for SW and one for FW.

IMO, as long as it has dried, it should be fine. And give it 3 good coats to seal the wood.
 
Personally I'd stay away water based stuff, its suitability depends on the amount of solids in it, the more opaque the mix the when shaken the less polymer in it so the less it will protect, and viser versa.
Get an external, but ether will probably flake over time with the heat and moisture, unless maintained regular.

You would probably be better off with a polyurethane or marine varnish which are oil based, 2 to 3 will be ok, but tends to put a skin on the timber, try mixing the varnish with a little terps to loosen it up so it soaks in to the grain, build up about 5 to 6 coats which will give you a better finish, and greater protection against moisture.
