Wow this looks fun, I've always loved Yorkshire pudding :D maybe I will give a go at this once I get some some meat and stuff to make the pastery
 
I have never eaten it but heard good things about it, and besides I want to have a fancy title.  Let's start signups for the YPC!

I still think I'd add the salt - it adds a certain level of depth to the other flavors.  Its been scientifically tested that it allows the taste buds to be more "receptive" to more subtle flavors.  So, adding a bit of mustard sounds great, but in addition to, not in place of, the salt - at least for me.
