::shrugs:: Last time I checked, no water-dwelling animals lives in an environment where they can see their relfection when the look down. Granted, no fish is especially supposed to be in a tank with ceramic caves, silk plants, and glass walls, either. But I think that if you can mimic the conditions they would naturally live in as mch as possible, it reduces stress and is best for your fish. So, my bettas have a bottom made of fine brown polished (well, smooth?) gravel. Yeah, I'm sure they have something more like silty-mud in the wild, but that seems like it'd be hard to gravel vac...
In short, I use substrates to hold my plants down, give old food and poop a place to settle (because I don't want my boys to lie in feces when the sleep), allow the bettas a more natural feeling bottom to rest on, and to prevent them from being stressed by thier reflection on the tank bottom. That, and I think it is more asthetically pleasing than something barren.
