Re-cycling my 5gal QT

Hey y'all I got a question...
My QT was fully cycled a few weeks ago. I put in a Flame Dwarf Gourami who died 3 days later. It's still been running but without feeding the BB. Last night I tested for ammonia and the water in the tube was colorless. I then added 16 drops waited about an hour and tested again. Ammonia was at 2ppm, 0 nitrites. This afternoon Ammonia was 1, Nitrite 0-.25, Nitrate 40.
Since I'm getting readings at day 1 I'm not sure how when and how much ammonia to add. I have read the cycling thread but am still not sure how to proceed.

This is why I like silent cycling. Don't have to worry about numbers.

This is all new to me. I actually have a 75gal that has been running since Aug 8th that I can't seem to get cycled. It's a fish in cycle due to the advice of my lfs before I knew any better. The QT is fishless.
