It's possible she just had one, or she had a few and some were eaten. Some females just have very small batches. One of my females turns out 5 fry max per batch, but it's regular, every month.

Keep in mind, they often are continually pregnant, as they have embryos of different sizes and ages in there. So she'll probably look fat and pregnant, even if she isn't that close to giving birth again.
