To eventually get back to the white color and try to breed the black spots out. I'll probably have to inbreed the first set of offspring, or take father-to-daughter and see what I end up with. I'm about to be keeping A LOT of fish trying to do this, but I'm ready! Maybe I should just knock down the wall near the bathroom and replace it with breeding tanks....

The good news is, the pet shop where I got the white crowntail has already said they'll take the unwanted babies in once they are old enough to sell.

Good goal.  However with this CT boy you have, I highly suspect he is a marble and therefor it will be extremely hard to get what you want --- especially with using fish with no known backgrounds.  
 
It is good that you have already secured a place for your juvies to go to.  That is a plus.
 
Yeah I'm pretty sure it will take a while, at best. The chances of getting what I want could be as low as 1%. That is why I was looking into genetics as much as possible. I need to find something recessive to his genes.
 
Don't worry all male bettas do it its Called bubble nesting they do it ready for when they have children if they do it it means there healthy
