Bicarbonate of soda and sodium bicarbonate are exactly the same - just a 'common' name vs a 'chemical' name (like sodium chlorate vs salt!)

on top of that, the baking soda is used as a buffer to stabalise the reaction, the yeast actually produces the co2. it will work without baking soda but may be erratic. ie 1 bubble a sec one hour and 1 bubble every 5 secs the next and so on.
