If the nitrite has been high for 2 weeks, you are almost there. It will literally drop over night. When you add more ammonia every day, how high do you raise it and how long does it take it to drop back to zero?
 
When I started cycling the tank I used @ 10ml to get to 5ppm so since then to keep the bacteria ticking over I've used 5ml (as per the cycling instructions I had read), I haven't actually measured it recently after adding the ammonia, though when I first did it, it was @ 1.2 - 2 ish ppm, I'll check my stats tonight. The ammonia now shows 0 (clear) when I measure 24 hours later. Must admit everynight when I test, because I believe I'm near the end I keep thinking tonights the night!

You're definitely close. Most of the tanks I've cycled have taken about a week for the ammonia spike to end and then another 2 weeks for the nitrite to drop.
 
I just started doing my first fishless cycle with ammonia (i'm on Day 2). I have another tank that's already established (cycled the "old fashioned" way before i learned about fishless).

One thing I've read about fishless . . . if the nitrItes are "off the charts" it has been suggested to do a partial water change to bring the level down to measurable levels (without disturbing the filter media or gravel).
