These are some of the colorful ones. It may be best to keep only one color. When they breed if they mix the offspring will be brown. Only start out with less than 10, they will quickly fill up the tank. They have such a low bioload that you could have tons in there.

If you do want snails you can block the holes with mesh, snails and shrimp would make a nice tank. I especially like mystery snails

Yes, it would also be best for them to have a few more plants and maybe a small piece of driftwood. Shrimp like to feed on the biofilm that grows on driftwood.

They also eat algae, so if you put a jar of small rocks in a windowsill where it gets sun and let algae grow on them you can put the rock in your tank. You can rotate rocks so you have a continuous supply

how often would i have to do a water change with shrimp and will it be different when cycling

Small fish: you could maybe do a single male guppy, but I wouldn't recommend it. Guppies are social fish so need a buddy. They also do best with more swimming room

Water changes:
I would do 50% weekly, especially when they have multiplied and theres lots. Is your tank already cycled with the current fish you have?
