This was our Xmas dinner :D

Hubby smoked a salmon all day Wednesday, and then we made a potato casserole and turnip casserole, a roast beef, green salad, beet salad, mushroom salad, and a few other accompaniments :):) super yummy!!

We say this every time we brithe turkey before hand, that we will never not brine a turkey again... allows you bring it up past the safe cooking temperature and it’s still super moist!

What was you guys' favourite food from your Christmas dinner? Gotta say mine was the potatoes with thyme over them with gravy.
 
I haven't celebrated Xmas for years but when I was a kid we used to go to the grandparents house on Xmas eve and have either roast duck, chicken, or beef with this really nice gravy, potatoe salad, potatoe dumplings, wiener (pronounced vi enna) sausages and a few other things. Gran on dad's side of the family was a really good cook. She also did magnificent cakes and dad followed her cooking skills and opened his own cake shop some years after she died. Unfortunately he was no good at handling money but damn, he could cook. But Xmas cakes and birthday cakes, wow, I'm amazed we didn't have diabetes as kids. :)
 
Right, turkey carcass stripped, one whole breast in the freezer, will do Easter. Remnants of the other breast shaved for sandwiches, all the other meat is now marinating for a curry.
Currently eyeing up the left over ham and thinking of doing a pea and ham soup. But some will have to be either frozen or taken to a relative. There's a lot of ham left. (We got given a 5lb ham, alongside a 20lb bird, could of fed a small army.)
 
our Christmas tradition has always been a good old Southern breakfast. After opening presents I cook salty country ham, scrambled eggs, hash browns biscuits and gravy. For supper I just through together a Christmas Lasagna. Happy Holidays!
