how big do male bristlenose fry generally need to be before they start getting their bristles?

They'll start to grow their "Bristles", when they're about 2" in length

usually after about 6-8 months (or so my lfs says)

yep - about 2" - 6 months is a fair guess as long as they are getting enough food and are growing.

If not their growth will be a lot slower

but at about 2" you'll be able to tell.
