I've has me three Assassin snails to help get rid of pest snails that were on the plants I bought. I noticed that two of then were stuck together ie: sucker to sucker.
Were they playing or mating? 
If they were mating how long before a baby assassin will appear?

They could well be mating, it is pretty common.
 
It will be quite some time before the babies appear - once they hatch, they bury themselves in the substrate for some time befoire emerging. They take around 18 months, sometimes longer to reach full adult size.
 
You will probably notice tiny little white tags on things then not notice babies for AGES.... unless you are like me and scrutinize your substrate endlessly to find one through the glass!  LOL
 
Chances are, the assassins are mating, you will definitely know when the assassins have laid eggs.
 
One of the most unusual eggs you will come across in this hobby, their eggs are in fact square shaped!!

As TLM mentions, it will be some time before you see this and seeing the tiny baby snails, since they will bury themselves under the substrate and emerge when they are good and ready.
