The tank is far from overstocked i think, it has 10 fish in. This is the stock - 2 x Gastromyzon sp. (affected fish) and 2 x Stiphodon sp., 2 x Schismotogobius sp. and 4 Lentipes sp. (all small gobies) Should I buy both melafix and pimafix treatments or do i just need 1? Cheers.

I think it could be a lack of potassium, a common sign of this is are wholes forming on leaves and them increasing over time. Do you feed your plants at all? Regular doses of trace ferts should stop this, if it is a potassium problem.

Try Echinodorus angustifolius not sure if it grows in Brazil but is definatly from South America and i think is the closest plant you'd get you vallis.

Personally i'd go for HC i think it looks better and is generally considered easier to grow, both will give you a nice carpet your looking for.

Lily pipes are said to be the best at dispursing water evenly, ADA sell them, here but as with everything ADA its expensive. JBL sell a cheaper alternative both from AE. If you like the ADA ones there is this ebay seller selling cheaper both ADA one and copy ADA ones.
