Will too much light stress my fish?

I do not see any problem here, but I will comment on the inaccurate "1 watt per gallon" advice you got wherever. Watts is not an indication of intensity, except when one is comparing identical bulbs/tubes. It is merely the amount of energy the bulb/tube requires to produce the light, but the light produced can vary significantly from low to moderate to bright. For example, a 7w LED bulb produces the equivalent light of a 60w incandescent bulb.
 
I basically summarized some technical info here. And I meant standard Watts, not LED equivalents, as I explained in my OP.

I'm not following this...anyway, just keep in mind that watts does not tell you the intensity. So saying a betta is fine with 1 watt per gallon is meaningless.

If you want to increase the light on the tank, add some floating plants and then increase the light a bit. After a few weeks, increase it some more. Wait a few weeks and increase it again. This way the fish get use to the brighter light slowly and it's less stressful to them compared to going from low wattage to huge wattage instantly.
