If say I got 2 or 3 apple snails, could they breed?

Provided you have at least one male and one female, they could. They do have to lay their eggs out of water, and they form big pink globs, so if you check under your hood regularly, you can prevent them from breeding excessively. If you want to get a few babies, but not too many, get an extra hood, and if you find a clutch of eggs, put the regular hood over a bucket and let them hatch into that.

So if I just had one then I wouldn't have any baby snails.

Not if you get a female that's mated before. I bought just one and I now have over a hundred little snails with more on the way.

snails are hermaphrodite means both sexes in the same snail.
Even if u got one u will have hundreds soon.

apple snails are not hermaphrodite, they are either male or female, males have a penis, if you have one snail, providing its very young you wont have any more snails, if its older and female it could have been mated with and as they store sperm until the season is right they could go on to lay fertilised eggs later on.
