Why didnt my ammonia go down?

Long story short i upgraded my fully cycled 5 gallon to a 10 gallon tank, i switched my filter over my heater and one plant but my substrate, driftwood and most plants are new. I had the old small filter on there for a week waiting for my new bigger one to come in the mail. Checked my ammonia yesterday and it was 0.50ppm so i did a 50% water change, did another water change earlier today and put the new filter in (still running the old cycled filter in there too) plus some seachem stability and now my ammonia is still at 0.50ppm. Shouldnt it go down when i do a water change?
My other levels are,
Nitrite 0ppm
Nitrate 5.0ppm
PH 6.6

I am also using API stress coat as my water conditioner

Nope i always get any dead leaves out when i change water, i also checked ammonia levels of water straight from my tap and its zero. My new substrate is fluval stratum, could that cause an ammonia spike?
 
Substrate also contains beneficial bacteria so you would have lost some when transferring. Thats the onky thing i can think of that would have made an impact
