I'm not sure when to start adding my plants and ornaments and stuff-- I didn't even start to cycle my tank yet

you can add plants and ornaments straight away.

yep agree with hondour. the reason the cycle happens is because the beneficial bacteria build up in your filter. they will also grow on ornaments and in the substrate, everywhere. so you may as well put it all in from day 1.
