Anacharis, moneywort, and hornwort are some more floating plants, easy to care for and you can plant them in the sand if you want. I have floating plants in all my tanks and like @Byron stated water sprite is one of the best.

Ok. Will my convicts, electric blue acara, or firemouth eat them?

the cichlids don't normally eat plants but will dig them up if they are near their nest.

Just get floating plant species. Some were suggested by me in post #43 and some by Retired Viking in post #45.
