Ok... I can just get a little "over board" with care and such and try to do way more than I have to lol. My parents even say that I do too much research hehe

3 peacock gudgeons should be fine. Have a piece of pvc pipe for each one and some plants, rocks or driftwood. Feed them well and let them do their thing.

If you just add everything you intend to add at once, then you can treat your tank as a QT tank. Just try not to add fish later or you risk infecting your established tank.

Depends on how many and what kind of fish you add later...

I'm planning on 3 peacock gudgeons, 2 nerite snails, (maybe 2 micro crabs) (I'll have a lot of hiding spots), 4-6 pygmy or julii cories, maybe some other small schooling fish if possible

Yes unless I feel as if I should change it. I was going to add them in slowly but by the sound of it, I should add them in all fairly quickly...

Should be just fine to add all at once, when fully cycled.
