What are you cooking?

I've eaten nothing but peanut butter the last two days. Something 'clicked' in what's left of my mind and I've just had wicked cravings for it. I've had it on toast, bagels, crackers, tortillas, cheerios, chunks of cheddar, strawberry pop tarts, and by the spoonful. Sometimes with pineapple.
I need to go buy more milk.

I eat Teddie brand natural peanut butter every day. I eat about 4 to 8 tablespoons everyday. I put it on rice cakes and wheat thins crackers. Gives me energy and satisfies hunger pains.

I, too, am a peanut butter lover. A middle of the night snack by the spoonful, on toast dipped in coffee, on crackers in veggie beef soup & as part of chicken satay sauce...or PB cookies (the old kind w/fork marks).

I was going to make steak stir fry, but it took a while to find the right meat in the freezer. So that will be for tomorrow. Tonight we'll have lentil/pumpkin veggie curry (from a pouch) on brown rice. I hope it's as good as it sounds.

Pumpkin soup with carrots, beetroot, parsnips and lentils.

It looks like tomato sauce now because of the beetroot. So we're having pasta with it too.

I will be baking salmon with honey mustard sauce today. Will make a side of mashed potatoes and hot mixed veggies.
For dessert, I will bake a yellow cake with blueberries and meringue frosting.

Hmmm, blueberries in a cake sounds good. Other than in pancakes and/or muffins I'm not really a blueberry fan but could see in a cake as it would be sort of like a muffin.

Tonight is going to be a BBQ boneless chicken breast with fried purple fingerling taters sliced up. Might add some broccoli to the taters but, sometimes, just meat and taters is all that is needed. ;)

I like blueberries straight up, with peaches, or in muffins, maybe pancakes, so cake seems like a good option.

I bailed again on stir fry since I'm playing with my new PC. We're having spanakopita & maybe popcorn & cheese later.

Here’s the maple/mustard/garlic baked salmon I made with gravy covered mashed potatoes and mixed veggies.

And I have leftovers for 2 more days.

Baked a blueberry cake. I just use duncan hines yellow cake mix and add lots of blueberries. I dont add frosting so as to keep the calories and sugar down.
The trick to keep blueberries from sinking to the bottom is to coat the blueberries with flour before dropping into the batter that you first put in the pan.

Funny with me and blueberries. It is one of those love/hate things. I REALLY like blueberry muffins. I also LOVE blueberry pancakes. Yet I'd throw a blueberry pie in the trash.

That blueberry cake looks good! I like many kinds of pies including blueberry. Cherry pie is often my birthday "cake", even frozen is ok.

I'm finally making beef stir fry. Broccoli, napa cabbage, red & green bell peppers, pea pods & onion, garlic, brown rice & soy sauce of course. I see my husband has gotten out canned bamboo shoots & water chestnuts, meh. His things not mine. NY strip steak in honor of my east coaster blizzard survivors?
