How important is a backing on the tank (an image or something)? And if it is important, is there something simple I can put back there (like paper or the wall)?

You can put anything back ther that you would like. Try to make sure though that it will survive a splash of water as there will likely be some. I have seen people use sheets, towels etc.

Fish just seem to be less stressed if there is one side of the tank that does not allow light in. Makes them feel safer i guess :dunno:

I supose it's a bit like comparing swimming in a swimming pool and feeling nice and safe to swimming in the ocean and having that nagging feeling that you're a little exposed :-( -_-

IMHO if your tank is against a wall the only purpose of a backing would be to hide the wires and junk behind the tank. If you wanted to limit light in an effort to reduce fish stress, you could cover three sides of the tank and limit/eliminate excessive motion in front of the tank. I don't feel that a back is all that important. One of my tanks has a back (blue posterboard) purely for my own sense of aesthetics the other has nothing but the wall.
