a pair of German Blue Ram as centerpiece fishes would look nice---they need a ph around 7.0 max

Try a school of glo-fish, they come in six different colors (including the non-genetically modified), they breed like crazy and their babies are adorable! Hatchetfish are also great in community, I love the Marble hatchetfish. And I adore the way schools of neons and cardinals look

but then, that's just me. It's been my experience that these fish will live through just about anything! 

And livebearers will do well in your basic pH :D

Oh...I forgot to mention, neons, cardinals and hatchets are soft-water fish. I don't suppose they'd die in hard water, but then I've never dabbled too much in pH...AFAIK stability is more important than the actual pH value, but Neons for example will breed only in soft water. Zebras are another matter. I've had them spawn in totally unsuitable tanks, back when I was a newbie :p
You could try adding driftwood to the tank to buffer the pH down a bit, it looks pretty as well ;)
