So my dwarf grass is growing fine, what my angelfish don't rip apart that is. I'm going to just remove the majority of it all and get perhaps a few tall growing plants. Any suggestions?

radican swords
bacopa
crypts
vals
cambombas
alternanthera reineckii
or ludwiga / rotala
sunset hygro
jungle val
crinum

I'd suggest going with some different varieties of anubias, they are generally left alone by angels.  And maybe a Amazon sword or two.

If it is the dwarf hairgrass look you like with foreground plants, you could try echinodorus tenellus (Pygmy chain sword)  or try dwarf sagittaria.  Not quite the same... but fits the role of the dwarf hairgrass.
