I've looked around quite a bit on this subject and have not come across a definitive answer on why it is stated that you should not use a Current USA Orbit Lighting Fixture under a canopy?

Here's the link to one of the sites with a bit more info on it.

Orbit & Canopy

Do not put this light in a canopy. If you have a canopy you'll need the SunPaq Retrofit.

But as far as I can tell there is no good reason to why this cannot be done.

Building my own canopy, so clearance won't be an issue. There will be plenty of ventilation through the back of the canopy to allow for dispersal of heat.

Any ideas?

if you are makeing your own hood then it wont be a problem

when you fix the light to the hood make sure you use brass scews unless the are provided then they will be stainless steel

normal screws rust and can polute the water
