So would it be safe to assume that the PH reading I was getting was due to CO2 being dissolved in the RO water, which was giving me a PH of under 5 ??

(though that level of measurement is well beyond the average hobbyist)

Andy sort of answered that . Hobby level test kits are inherently not able to test the pH of pure RO water. Its fair to say that probably some of that acidity was due to dissolved CO2, but likely a big chunk of it was from an im-precise hobby level test kit.
