Problem with that is that whenever I do a water change (which is every week) that's going to cause a wild fluctuation in the water hardness.

It’s worked fine for my Cherry shrimp, which are surely more delicate than endlers.

Crushed coral will provide the calcium but to increase GH you also need magnesium ions.

Calcium alone will increase GH. If you're saying it would be even better to increase magnesium aswell, then I would agree. More natural.
