What is the best way of getting rid, was thinking assassin snails, as I know my shrimp unless dying already would be relatively safe. Are there any other options?

You can always drop a piece of lettuce into the tank. Pest snails will find their way to it, you pick up the lettuce and dispose. Another way is to just pluck them off the tank as you see them and either crush them or do as I did and put them in a soda bottle (sealed) and dispose. If you have the space, a clown loach will be a very effective snail remover, more than an assassin snail which can only eat snails larger than its (what's the word? The thing it uses to get into the other snail's shell?)

I thought there were other loaches that help with this as well? I believe yoyo loaches

I don't know about yoyo loaches. They probably do, but clowns are the only ones I'm even a little familiar with.

i just did a quick google search. yoyo's only grow to 6in and eat snails, this might be of help as well.

Get 3 or 4 assassins. They are the best thing. Loaches need to be in groups of ATLEAST 4, preferably more. Don't do loaches. Assassins might take a little longer, but they do an awesome job.
