If you post pictures of your cories I can try and sex them for you. As Jake said, the females are bigger and their bellies more rounded, especially when they are full of eggs. Another way to remove the eggs from the glass is to gently roll them up and onto your finger. Be sure and look around for eggs on any plants and even equipment for more eggs - they seem to like spreading them on plants especially, and the cories I've bred prefer floating plants.
Definitely remove the eggs or put them in a net breeder in the same tank and treat whatever water they are in with peroxide. Lots of folks use methylene blue to ward off fungus growth, I think the stuff is nasty and stains everything. Peroxide works perfectly well and you don't have to be shy about adding plenty to your water.
Don't be too disappointed if only a small percentage of the eggs are fertilized and hatch. I imagine that's why Mother Nature set them up produce so many eggs in the first place.
