It's still alive and eating, but hides now when I move. I have a canopy on top of the tank that I need to take off to catch him, plus my only opportunity is late at night when the kids are in bed. Not sure it's gonna happen, we'll see.

Glad he's still hanging in there! Eating is always a good sign.
If you put the net into the tank now and just let it sit in there, let the fish get acclimated to it being there and calm themselves down, it can make it easier to slowly, but calmly and confidently, as if you're doing typical tank maintenance, approach the tank and try to calmly, gently, use your hand to herd him into the net without sending him into a panic. This video is really useful, and I've found myself linking it to a lot of people lately! I found it really helpful though.
