Oscar And Ammonia!

Having set up a new tank (210 litres), planted and scaped, i put some filter media from another sponge filter from my lobster tank, some gravel from my oscar tank, and Cycle and plant food in, to start the cycle. This was three days ago.
However the cloudiness of the old oscar tank promptd me to test the water.
Ammonia was sky high, nitrite very low as was the nitrate,
The levels in the new tank were nil and I thought that the suffering oscar and sydontis catfish would have a better chance of survival in the new tank.
This morning they both seem very happy and unstressed and swimming all over.
How can I make sure I haven't done the wrong thing by putting them in too early?
I thought the better of two evils would be the new dechlorinated water.
hope someone can help.
The tank is a new Aqua one 980.PH 7.5
 
Did you put your filters from the other tank over to the new tank.

Yes, some gravel from the oscars existing(small) tank, hence the reason for a new tank, she's getting BIG!
Some of the filter sponge from my lobster's internal filter, and some gravel and slate from a cold water tank.
Any good?
 
Do you have any other tanks with some mature filter sponges in.

because oscars are nasty fish and only digest half of what they eat, the other half is blow out the gills and is left to rott on the bottom.

The old tank was brown cloudy.
The new tank is crystal clear, and levels are still nil. She seems happy enough but am keeping the feeding to a minimum.
I have lowered the temp to about 28C, and will add an airstone tomorrow.
I know oscars are a bit messy, had a pair a few years ago, but will not add any more fish for a few weeks.
I have a pair of angels which I am thinking of adding eventually.
Hope I am doing ok.
