What you have is sometimes called 'dead' rock, because it used to have all kinds of bacteria/coral/plankton living in and on it. Once it dries out, however, everything on it dies, and the purple algae called coralline algae, which has a skeleton dies, and leaves behind its skeleton, which is white. The highest your pH will get with that is 8.3ish. The dKH probably won't change much if any.
