New Tank 2 - Larger size

GOOD NEWS :)
My nitrite reading is now virtually zero , as a result of adding used gravel from the fish shop to speed the process, and two 40% water changes daily for the last week!!
My nitrate reading is still zero - I believe this takes longer, but, my tank is well planted, with rock and clay hiding places, (all sterilised) - and, I have read that plants keep nitrates down anyway.
I think - (hope) the crisis is over, and I haven't lost any fish :):)
Next thing is to think about in a week or sos time is thinning my tank - I realise it is overloaded.
Existing in large tank
(100 x 50 x 50 cm = 250 litres )

5 x Red Rainbow
2 x Golden Gourami
2 x Blue 3 spot Gourami
6 x Dwarf Gourami
1 x Sucking catfish ( pleco )
10 x Neon Tetra
10 x Serpae Tetra
Questions :
Is it ok to come down to just the 2 Golden Gourami as my "specimen" fish , and lose the Blue 3 spot gourami ?
I want to add some platy - maybe 6 - I do NOT want to breed them - I think the male is the more colourful of the two - yes ? - ( ie - a more red head and fin ??? ) - is it ok to just keep males? - I want to learn a LOT more before I even consider breeding, and, apparently, it is almost impossible to stop these breeding if mixed sex !
I would maybe like a bottom cleaning fish,but, the only one I can get here in Cyprus is the Albino Cory, and, that will maybe overload the tank - do you think a bottom cleaner is neccessary, or, will regular gravel cleaning do the same job?
Cyprus is inly a small island, so not well blessed with fish range.

OK - a little lateral thinking here !
I am led to believe that the yellow and blue spot Gourami can be a little agressive - maybe not a good idea to keep with my other fish above ?
I can easily give the Gourami to a friend - no problem.
What I am seeking is maybe two larger fish as "show fish" , preferably in a golden or yellow colour to add colour balance to the tank - but who will live peacefully with my existing fish, bearing in mind tank size.
I would welcome your ideas and input as to fish I can research for this purpose.
