moving decor around...fish to another tank?

I am planning to move my aquarium decor around and should I put the fish in a different tank or can I leave them in there while I move the decor around?

I have tried this one and learned the hard way.
I have sand in my tank and quite alot of plants, I didn't like the way the plants looked, so i rearranged them. Within 4 hours all my sensitive fish were dead.
BIG AMONIA SPIKE. I think it was when i disturbed the sand, I normally just syphened the poo from the surface, without stiring it up regularly.

should i drain the water into other tanks and then move the plants around and then add the water and fish?

It could be wrong but that way has worked fine for me.
