In a Fish-In cycle, you never worry about the bacteria for a moment, its not a concern! There will be plenty of ammonia and nitrite(NO2) below the levels that the test kit detects for the bacteria to munch on and for their colonies to be growing. In Fish-In cycling your thinking life is simple! You just have to worry about doing enough and big enough water changes to keep those ammonia and nitrite levels below 0.25ppm at all times. It generally takes about a month for the bacteria to mature in a Fish-In cycle, not that different from a fishless cycle. You'll know you are about finished when you finally see zeros for the readings and don't have to change water for two days, still getting zero readings on your morning and evening tests.

I would crush those snails between your fingers and feed them to your rasboras every chance you get. Another thing you can do is put a large half of cucumber down on the gravel overnight and see if a bunch of snails are crawling on it in the morning. Hopefully they'll like it and you can toss them out with the cucumber at morning trash time!

Yes, and don't bother with NO3, your concerns right now are limited to ammonia and nitrite(NO2).
